What You Will Need

Method

Step 1 - Check your Nilotica temperature

If it is very cold and firm, let it sit at room temperature for 30 minutes. You are looking for a consistency similar to thick frosting.

Step 2 - Add Nilotica to your mixing bowl
Scoop all 1,350g of Nilotica into your mixing bowl using a spatula. No melting, no double boiler.

Step 3 - Whip on low, then build up
Start your mixer on low speed for 1-2 minutes to break the butter down and begin incorporating air. Increase to medium speed and whip for 3-4 minutes. The butter will lighten in colour and increase in volume as air is incorporated.

Step 4 - Add your liquid ingredients
With the mixer running on low, slowly drizzle in the jojoba oil and vitamin E. Mix on medium for another 2-3 minutes until fully incorporated and the texture is smooth and fluffy.

Step 5 - Add arrowroot powder
Add the arrowroot powder one tablespoon at a time with the mixer on low. Once incorporated, increase to medium and whip for a final 1-2 minutes. The finished butter should be light, creamy, and hold a soft peak.

Step 6 - Jar and label
Transfer to clean, dry jars immediately. Do not refrigerate unless your kitchen is consistently above 25°C. Label with the batch date.

Shelf Life and Storage

This recipe, preserved with vitamin E, has an estimated shelf life of 9-12 months when stored in a cool, dry place away from direct sunlight. Nilotica's high oleic acid content means it is slightly more susceptible to oxidation than high-stearic butters, which is why the vitamin E addition is important rather than optional.

Keep lids closed between uses and use a clean spatula rather than fingers to scoop, to avoid introducing water or bacteria into the jar.
